Almond Nut Milk

Ingredients

1 cup blanched almond nuts

4 cups water

1-2 tablespoons honey

1/4 teaspoon Pink Himalayan sea salt


Directions

To blanch almonds, pour boiling water over nuts, wait for one minute then drain, remove skins by rubbing between fingers.

Place all ingredients in blender: almonds, water, honey, sea salt.

Blend ingredients in water using half of the water for 2-3 minutes until smooth and creamy.

Add remaining water and blend well again.

Refrigerate.

Shake well before serving.


Cashew Nut Milk

Ingredients

2/3 cup water

2/3 cups raw cashew nuts

1/8 teaspoon pink Himalayan sea salt

1 tablespoon honey

Add:

3 1/3 cups water


Directions

Blend in a blender until creamy, about 1 minute:

Blend well and refrigerate.

Shake well before serving.


No-Oil Granola

Ingredients

7 cups rolled oats

1 cup quick oats

1 cup shredded unsweetened dried coconut

1 cup sliced or chopped raw almond nuts

1 teaspoon Pink Himalayan sea salt

3/4 cup raw sunflower seeds

1 cup water

1/2 cup honey or maple syrup


Directions

Mix well first 4 ingredients in a large bowl and set aside.

Blend in a blender, sea salt, sunflower seeds, water and sweetener until creamy.

Pour the liquid over the dry ingredients and mix well with spatula or hands.

Spread evenly onto a baking sheet and bake at 170 degrees for 3 hours turning every 30 minutes.


Honey Nut Granola

Ingredients

3/4 cups water

1/2 cup honey

1 tablespoon molasses

1 teaspoon Pink Himalayan sea salt

1 1/2 cups pitted dates

1 cup walnuts, peanuts

13 cups rolled oats

1-2 cups quick oats

1 cup quick oats

1/2 cup shredded dried coconut

1 cup sliced or chopped raw almond nuts


Directions

Blend in a blender, water, sweetener, sea salt, dates, walnuts until creamy.

Pour the liquid over the dry ingredients and mix well with spatula or hands.

Spread evenly onto a baking sheet and bake at 170 degrees for 3 hours turning every 30 minutes.


Hummus

Ingredients

2 cups garbanzo beans

3-4 tablespoons lemon juice

2 garlic cloves

1/3 cup sesame seeds

1 teaspoon onion powder

1/4 to 1/2 teaspoon Pink Himalayan sea salt


Directions

Combine all ingredients in blender and blend until very smooth, add liquid as needed.

Taste and add additional lemon juice, onion powder, garlic or salt if desired.


Gluten-free Bake / Bread

Ingredients

1 coconut blend in 2 cups of water

1 cup of grounded flaxseed

1 cup grounded sunflower seeds

2 cups corn flour

3 cups dhal (split peas/lentils) flour

3 cups cooked whole grain brown rice

1/4 cup olive oil

1 tablespoon salt

2 tablespoons blackstrap molasses

4 cups water


Directions

Mix together wet ingredients and add to dry. Mix thoroughly.

Place dough in an grease baking tray and place in oven.

Bake at 3500 fahrenheit or 1770 celsius for 1 hour.

Keep in mind that gluten free bread will not be able to knead like wheat bread.


Oat Burgers

Ingredients

3 cups water

1/4 cup Bragg Liquid Aminos

1 tablespoon beef-like seasoning

1 teaspoon italian seasoning

1 teaspoon garlic powder

1 1/2 teaspoons onion powder

1/2 teaspoon salt

3 tablespoons nutritional yeast flakes

1/4 cup diced onion

3 cups quick oats

1/2 cup finely chopped walnuts or pecans


Directions

Place all ingredients in a saucepan except oats, nuts and onions; simmer together for 3 minutes.

Remove from heat and stir in quick oats, nuts and onions while liquid is still hot.

Allow sufficient cooling to handle in the next step.

Shape into burger-sized patties using a desired cover, and place on a nonstick pan or greased cooking pan.

Bake at 350°F until brown on both sides.

Note: you may substitute any other grain for oats (e.g. quinoa, buckwheat)


Beef-like Seasoning

Ingredients

1 cup browned whole grain flour

2 teaspoon onion powder

1 teaspoon onion salt

1/2 teaspoon sage

1/2 teaspoon thyme

1/3 teaspoon marjoram

3 tablespoons parsley flakes, powdered in coffee grinder or rubbed to powder between palms of hands

1 1/2 teaspoon garlic salt

1 1/2 teaspoon celery salt

1/4 teaspoon savory


Directions

Mix together well in a small bowl.

Store in an airtight jar.


Simple Mayonnaise

Ingredients

12 ounce box Mori-Nu Silken Tofu

1 cup raw cashews

1/4 cup lemon juice

1 1/2 tablespoons honey

1 teaspoon Pink Himalayan sea salt

1 teaspoon onion powder


Directions

Place all ingredients in a blender and blend for at least 1 minute until silky smooth. Chill to thicken.


Bar’B’Que Sauce

Ingredients

3 cups tomato puree or sauce

5 tablespoons blackstrap molasses

3/4 cup honey

2 teaspoons onion powder

3 teaspoons garlic powder

1 1/2 teaspoons parsley flakes

1 teaspoon salt

2 tablespoons Bragg Liquid Aminos

2 tablespoons lemon juice


Directions

Combine all ingredients in a saucepan and bring to a boil.

Reduce heat and simmer for 10 minutes.


Cheese Spread

Ingredients

1 1/4 cups water

1 cup raw cashew nuts

2 tablespoons sesame seeds, unhulled

1/3 cup chopped sweet red bell pepper or pimiento

4 tablespoons nutritional yeast flakes

1/4 teaspoon celery salt

1/2 teaspoon garlic salt

1 teaspoon onion salt

3/4 teaspoon Pink Himalayan sea salt

2 tablespoons lemon juice


Directions

Add to a blender cashew nuts, water and sesame seeds and blend until creamy

Add to blender sweet red bell pepper or pimiento, nutritional yeast flakes, celery salt, garlic salt, onion salt, sea salt and lemon juice. Blend until creamy.


Mac & Cheese

Ingredients

Macaroni

Semo macaroni (or your favorite kind)

Water

Cheese sauce

1 cup raw cashew nuts

1 cup water

2 tablespoons sesame seeds, unhulled

1 cup water

1/3 cup chopped sweet red bell pepper or pimiento

2/3 cups nutritional yeast flakes

1/4 teaspoon celery salt

1/2 teaspoon garlic salt

1 teaspoon onion salt

3/4 teaspoon Pink Himalayan sea salt

2 tablespoons lemon juice


Directions

Macaroni

Bring macaroni to a boil

Cheese sauce

Add to a blender cashew nuts, water and sesame seeds and blend until creamy

Add to blender sweet red bell pepper or pimiento, nutritional yeast flakes, celery salt, garlic salt, onion salt, sea salt and lemon juice. Blend until creamy.

Add to cooked macaroni noodles and mix well.

Can serve right away or bake in the oven for 20 minutes to set.


Holiday Nut Loaf

Ingredients

3 cups water

1/4 cup Bragg Liquid Aminos

1 tablespoon beef-like seasoning

1 teaspoon italian seasoning

1 teaspoon garlic powder

1 1/2 teaspoons onion powder

1/2 teaspoon salt

3 tablespoons nutritional yeast flakes

2 cloves garlic

2 onion chopped

2 cups pecans, grounded

3 cups cooked brown rice


Directions

Place all ingredients in a saucepan except rice and nuts; simmer together for 3 minutes.

Remove from heat and stir in rice and nuts while liquid is still hot.

Allow sufficient cooling to handle in the next step.

Pour into baking dish or a nonstick pan or greased cooking pan.

Bake at 350°F until brown.


Brown Rice

Ingredients

3 cups water

1 cup brown rice

1 teaspoon pink Himalayan sea salt

Directions

Place all ingredients in a crock pot and cook on high for 3 hours.








Beans

Ingredients

2 cups beans (any kind)

5 1/2 cups water

1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon Italian seasoning

2 teaspoon sea salt

1 teaspoon cumin

1 medium fresh onion diced small

6 cloves of garlic (or as many as you like)


Directions

Place first 7 ingredients to a crock pot and cook for 6 – 8 hours. Add fresh onion and garlic after first two to three hours of cooking.


Heaven’s Chocolate Fruit Nut Cake

Ingredients

2 cups garbanzo beans - mix in a food processor until creamy

1/2 cup ground flaxseed

3 ground walnuts

1/2 cup coconut sugar (any sweetener)

1 cup cranberries chopped in food processor while some left whole

1/4 cup pecans chopped in food processor

1 tablespoons carob powder

1/2 tablespoons cardamon

1/4 teaspoon salt

2 cups garbanzo beans flour

1 cup soy milk

1/4 cup water (optional)


Directions

Place all ingredients into a mixing bowl, mix thoroughly and place in a greased 8 inch round cake pan.

Preheat oven to 300 d. F (150 d. C). Bake in preheated oven for 40- 45 minutes. Allow to cool and enjoy.
